Restaurant cash flow is not the same as restaurant EBITDA. Restaurant cash flow is what actually hits the bank after card settlements, suppliers, VAT, payroll and drawings.

A pack can show healthy restaurant cash flow one month and a tight week the next if payroll and VAT were never plotted. Restaurant cash flow reporting should sit beside EBITDA, not replace it, and a forecast is not a guarantee.

What to look at
